Korean-Style Pork Belly Nachos
This pub-style treat goes great with a beer and a movie!

Ingredients
- 1 lb Pork Belly Sliced
- 2 Garlic Cloves Minced
- 2 tbsp Soy Sauce
- 2 tbsp Sesame Oil
- 2 tbsp Red Pepper Powder
- 1 tbsp Honey
- 1/3 cup Kimchee Juice
- Tortilla Chips
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 1 cup Chopped Kimchee
- 1 cup Chopped Red Onions
- 1/3 cup Sour Cream
- 1/4 cup Kimchee Juice

Cut pork belly slices into 1 inch strips.

In a mixing bowl, combine the pork, garlic, soy sauce, sesame oil, red pepper powder, honey, and kimchee juice and mix well.

Cook the pork in a skillet over medium high heat.

Place a layer of tortilla chips on an oven-safe pan or skillet, top with 1/3 cup cheddar, 1/3 cup monterey jack, 1/3 cup chopped kimchee, 1/3 of the cooked pork, and 1/3 red onions. Repeat this two more times on top of each other to create 3 layers of nachos. Place under broiler until cheese is melted.

Create the sauce by combining the two sauce ingredients and mixing well.

Serve nachos topped with the sauce.
