Roasted Butternut Squash

A little olive oil, some garlic, and some chopped squash, and you've got a perfect side dish.

Ingredients

  • 1 butternut squash peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • salt and ground black pepper to taste

Instructions

  1. Turn the oven up to 400 F.

  2. In a big bowl, toss the squash around with the olive oil and garlic, then season it with salt and black pepper. Arrange the prepped squash cubes on a baking sheet.

  3. Roast the cubes in the oven for 25 to 30 minutes. The squash should be tender and lightly browned.
