Salmon with a Little Cajun Spice Sound Good?

Cajun Parmesan Salmon

A delicious salmon meal with a little Cajun heat.

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 16 oz salmon fillets 4 x 4oz fillets
  • 2 tspn Cajun seasoning
  • ground black pepper
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1/3 cup chicken broth
  • 1 juice of lemon
  • 1 tbsp honey
  • 1 tbsp fresh parsley chopped
  • 2 tbsp grated Parmesan

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.

  2. Season fillets with 1 tspn Cajun seasoning and black pepper. Place fillet on the heated skillet skin-side up. Cook until fillet is a deep golden brown. Flip and cook for about 2 more minutes. Remove from skillet.

  3. Add the butter and the garlic to the skillet. Once the butter is melted, add the chicken broth, lemon juice, parsley, honey, Parmesan cheese, and the rest of the Cajun seasoning. Bring to a simmer and reduce heat to medium.

  4. Place salmon back into the skillet and simmer.

  5. Once sauce is reduced, check to see if salmon is cooked all the way through.

  6. Add lemon slices to garnish and serve.
