Shaved Fennel with Orange and Olives

Ingredients
- 2 oranges
- 1 fennel bulb trimmed
- 12 kalamata olives pitted and coarsely chopped
- 1/4 tsp freshly ground black pepper
- chopped fennel fronds for garnish

Peel and section the oranges over a bowl. Make sure to save any juice that comes out.

Shave the fennel bulb using a mandoline slicer, and toss the shavings with the orange sections, the saved juices, olives, and pepper. Garnish with fennel fronds, if desired.
