Sweet and Salty Shaved Fennel with Orange and Olives

Shaved Fennel with Orange and Olives

Ingredients

  • 2 oranges
  • 1 fennel bulb trimmed
  • 12 kalamata olives pitted and coarsely chopped
  • 1/4 tsp freshly ground black pepper
  • chopped fennel fronds for garnish

Instructions

  1. Peel and section the oranges over a bowl. Make sure to save any juice that comes out. 

  2. Shave the fennel bulb using a mandoline slicer, and toss the shavings with the orange sections, the saved juices, olives, and pepper. Garnish with fennel fronds, if desired.
