
Grilled Pork and Peach Tacos
Fruit in a taco? We can make it work!
Ingredients
- 1/4 cup Honey
- 1/4 cup Chipotle Pepper in Adobo
- 2 Garlic Cloves
- 1/2 cup Oil
- 1 tspn Chili Powder
- 1 tspn Cumin Powder
- 1 tspn Black Pepper
- 1 tspn Salt
- 1 lb Pork Tenderloin
- 4 Peaches Halved and pitted
Instructions

In a food processor or a blender, combine the honey, chipotle pepper, garlic cloves, oil, chili powder, cumin powder, black pepper, and salt until smooth. Pour into a large ziplock bag.

Place a pork tenderloin inside the ziplock bag. Close the bag and try to let out as much air as possible so the tenderloin can marinate completely covered in the fridge for 2 to 24 hours.

Drizzle some oil over the flesh side of the peaches and brush so the entire exposed flesh has been coated.

Preheat the grill to medium-high heat and grill the tenderloin for 30 to 35 minutes. Grill the peaches flesh-side down for 2 to 3 minutes.

Slice the tenderloin and chop up the peaches. Place inside tortilla with your favorite taco toppings. Enjoy.
