Thai Chicken-Stuffed Sweet Potatoes

Okay, we know this isn’t your typical loaded baked potato. But trust me when I say that once you try this version, you’ll never ant to go back to the plain, mealy potato and butter ever again.

This Thai chicken and sweet potato dish is addictive and the perfect balance between savory, sweet, and spicy that will have your taste buds rolling around in pure bliss and joy. Don’t blame us if you’re upset for not trying this dish earlier, because we guarantee you will be after making and eating this!

The sweet potato is a better substitution than the typical russet potato that would normally be used in a baked potato, as it adds a slight sweetness and different texture to the bite. Unlike the sweet potato, you can substitute the chicken for another protein such as lamb, beef, or pork- or even your favorite vegetable!

The peanut sauce is forgiving and will work with nearly if not all flavors in your food. Out of your favorite peanut sauce? No worries, it’s easy to whip some of your own up with some peanut butter, soy sauce, lime juice, brown sugar, and red pepper flakes! Just mix and add to your liking and taste to make your own special sauce!
