One-Pot Pad Thai
This signature Thai dish can be easily made at home using one pot and a few ingredients.

Ingredients
- 8 oz flat rice noodles
- 2 tbsp sesame oil
- 2 eggs lightly whisked
- 1 chicken breast diced
- 1/4 cup shallot chopped
- 1 cup bean sprouts
- 1/2 cup peanuts crushed
- 1/4 cup green onions chopped
- 1/4 cup cilantro chopped
Pad Thai Sauce
- 1/8 cup fish sauce
- 1/8 cup rice vinegar
- 1/8 cup soy sauce
- 1/8 cup brown sugar
- 1/8 cup lime juice
- 1/8 cup sriracha sauce
Instructions

Cook the rice noodles according to the package instructions.

Mix 2 tbsp of sesame oil into the cooked rice noodles.

Add 1/2 tbsp of sesame oil to a pot and coat the bottom evenly. Pour in the eggs and scramble over medium-high heat. Remove from pot.

Add another 1/2 tbsp of sesame oil to the pot and cook the diced chicken breast until cooked thoroughly. Remove the chicken from the pot leaving the grease intact.

Add the shallots to the pot and cook until tender, then add in the noodles, scrambled eggs, and chicken and stir.

Pour in the Pad Thai sauce and mix well. Finally, mix in the bean sprouts, crushed peanuts, green onions, and cilantro.
