Invigorating, lemony cake cookies, perfect for tea time!
- 1 18.25 ounce package lemon cake mix
- 2 eggs
- 1/3 cup vegetable oil
- 1 teaspoon lemon extract
- 1/3 cup confectioners' sugar for decoration
Turn the oven up to 375 F.
Pour the cake mix into a big mixing bowl, then stir in the eggs, oil, and lemon extract until it's all well blended. Pour the confectioner's sugar into a small bowl, then drop teaspoonfuls of the cake dough into it. Roll the balls around until they're lightly covered with sugar, then put them on an ungreased cookie sheet.
Bake the balls for 6 to 9 minutes in the preheated oven. When the bottoms turn light brown, you're all done.
