Breakfast Quesadillas
An easy breakfast quesadilla filled with cheese, eggs, and bacon.

Ingredients
- 6 eggs
- 1/4 cup milk
- salt to taste
- pepper to taste
- 1/2 green pepper diced
- 4 tbsp unsalted butter
- 6 slices bacon cooked, drained, and chopped
- 3/4 cup shredded cheddar cheese
- 6 medium soft tortillas
Instructions

Whisk the eggs, milk, salt, and pepper in a medium-sized bowl. Add the green peppers and combine well.

Melt 2 tbsp of the butter in a large skillet over medium heat. Add in the egg mixture and cook until it is no longer runny. Transfer to a plate.

Melt another 2 tbsp in the skillet over medium heat and place a tortilla in the middle.

Top the tortilla with 1/4 cup of the cheese. Add a layer of the eggs on top of the cheese, then the bacon and some more cheese.

Place another tortilla on top and press down lightly. Heat both sides for 2-3 minutes each. Repeat with remaining tortillas.
