Wake Up To Some Mexican-Inspired Bacon and Eggs

Breakfast Quesadillas

An easy breakfast quesadilla filled with cheese, eggs, and bacon.

  • 6 eggs
  • 1/4 cup milk
  • salt to taste
  • pepper to taste
  • 1/2 green pepper diced
  • 4 tbsp unsalted butter
  • 6 slices bacon cooked, drained, and chopped
  • 3/4 cup shredded cheddar cheese
  • 6 medium soft tortillas


  1. Whisk the eggs, milk, salt, and pepper in a medium-sized bowl. Add the green peppers and combine well.

  2. Melt 2 tbsp of the butter in a large skillet over medium heat. Add in the egg mixture and cook until it is no longer runny. Transfer to a plate.

  3. Melt another 2 tbsp in the skillet over medium heat and place a tortilla in the middle.

  4. Top the tortilla with 1/4 cup of the cheese. Add a layer of the eggs on top of the cheese, then the bacon and some more cheese.

  5. Place another tortilla on top and press down lightly. Heat both sides for 2-3 minutes each. Repeat with remaining tortillas.
