Classic Chicken Noodle Soup

Ingredients

  • 1/4 cup olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 4 celery stalks sliced
  • 1 tspn salt
  • 1 tspn pepper
  • 3 garlic cloves chopped
  • 8 cups chicken broth
  • 8 oz egg noodles
  • 4-5 cups cooked chicken
  • 1/2 cup chopped parsley

Instructions

  1. In a skillet, heat olive oil on medium-high heat and add the onion, carrots, celery, salt, and pepper and cook for 15 minutes. Add the garlic and cook another minute.

  2. Pour in the chicken broth and bring to a boil.

  3. Add the egg noodles and cook for 6 minutes.

  4. Add the cooked chicken and cook 2 minutes. Salt and pepper to taste.

  5. Add the parsley, mix well and serve hot.
