Ingredients
- 1 lb pork sausage
- 1/3 cup chopped onion
- 4 cups shredded Monterey Jack or cheddar cheese
- 8 large eggs lightly beaten
- 10 3/4 oz condensed cream of mushroom soup
Instructions

Preheat your oven to 400°F.

Cook the pork sausage and the onion in a large skillet over medium heat until the sausage is cooked through. Drain excess grease.

Transfer the sausage and onion to a greased 13x9 inch baking tray. Sprinkle over with the cheese.

Combine eggs and soup in a mixing bowl and pour evenly over the cheese.

Bake for 30 to 35 minutes or until a toothpick comes out clean in the center.
