Weekend Breakfast Bake

A quick, delicious breakfast bake with pork sausage.

Ingredients

  • 1 lb pork sausage
  • 1/3 cup chopped onion
  • 4 cups shredded Monterey Jack or cheddar cheese
  • 8 large eggs lightly beaten
  • 10 3/4 oz condensed cream of mushroom soup

Instructions

  1. Preheat your oven to 400°F.

  2. Cook the pork sausage and the onion in a large skillet over medium heat until the sausage is cooked through. Drain excess grease.

  3. Transfer the sausage and onion to a greased 13x9 inch baking tray. Sprinkle over with the cheese.

  4. Combine eggs and soup in a mixing bowl and pour evenly over the cheese.

  5. Bake for 30 to 35 minutes or until a toothpick comes out clean in the center.
