
Bacon BBQ Chicken Loaf
A meatloaf stuffed with chicken, peppers, and cheese surrounded by crispy bacon.
Ingredients
- 5 chicken breasts
- 1 tbsp salt
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 1 tbsp onion powder
- 1 tspn chili powder
- 1 tspn pepper
- 1/2 tspn cayenne pepper
- 20 slices bacon
- 1 cup BBQ sauce
- 10 slices cheddar cheese
- 2 green bell peppers sliced
- 1/2 red onion sliced
- 2 red bell peppers sliced
Instructions

Preheat the oven to 350°F.

Cut the chicken breasts crosswise in half, then cut the thicker half horizontally to create 3 cutlets.

In a small bowl, stir and combine the salt, garlic powder, paprika, onion powder, chili powder, black pepper, and cayenne.

Pour the dry spice mix over the chicken and coat evenly.

Arrange the bacon slices in a loaf pan, making sure the bottom and sides are completely covered and portions of the bacon are hanging out on the edges.

Layer 4 chicken cutlets, 2 tablespoons of the bbq sauce, 5 slices of cheese, 4 more cutlets, another 2 tablespoons of bbq sauce, the green pepper, onion slices, another 2 tablespoons of bbq sauce, the red pepper, 5 cheese slices, and the remaining chicken. Wrap the hanging strips of bacon over the top of the loaf.

Cover the loaf with tin foil and bake for 1 hour. Drain excess fat, and bake for another 30 minutes uncovered, making sure the chicken is cooked through and the bacon is brown and crispy.

Invert the loaf onto a wire rack set on a baking sheet and baste it with the left over bbq sauce.

Broil for 5 minutes, until the glaze slightly dries.

Slice and serve with rolls or other barbecue party food.
