Whip Up a Tasty Bowl of Shrimp and Broccoli Rotini

Shrimp and Broccoli Rotini

Ingredients

  • 6 cups water
  • 8 oz rotini uncooked
  • 3 cups fresh broccoli florets
  • 2 tbsp olive oil
  • 1 lb large shrimp peeled and deveined
  • 2 tsp lemon rid grated
  • 2 1/2 tbsp butter unsalted
  • 2 tbsp fresh lemon juice
  • 5/8 tsp salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Bring 6 cups of water to a boil in a big saucepan. Add the pasta, and cook according to package directions, omitting salt and fat. Add the broccoli during the last 3 minutes of cooking, then drain.

  2. In the meantime, heat a large skillet over high heat. Then add oil, and swirl it around to coat. Add the shrimp to the pan, and sauté for about 2 minutes. Stir in lemon rind, and sauté 1 more minute. Then add the pasta mixture, butter, lemon juice, and salt to the pan. Sauté 1 minute, stirring occasionally, toss to coat. Sprinkle with black pepper and serve immediately.
