Shrimp and Broccoli Rotini

Ingredients
- 6 cups water
- 8 oz rotini uncooked
- 3 cups fresh broccoli florets
- 2 tbsp olive oil
- 1 lb large shrimp peeled and deveined
- 2 tsp lemon rid grated
- 2 1/2 tbsp butter unsalted
- 2 tbsp fresh lemon juice
- 5/8 tsp salt
- 1/2 tsp freshly ground black pepper

Bring 6 cups of water to a boil in a big saucepan. Add the pasta, and cook according to package directions, omitting salt and fat. Add the broccoli during the last 3 minutes of cooking, then drain.

In the meantime, heat a large skillet over high heat. Then add oil, and swirl it around to coat. Add the shrimp to the pan, and sauté for about 2 minutes. Stir in lemon rind, and sauté 1 more minute. Then add the pasta mixture, butter, lemon juice, and salt to the pan. Sauté 1 minute, stirring occasionally, toss to coat. Sprinkle with black pepper and serve immediately.
