Sheet Pan Red Curry Mussels
These spiced-up mussels may put up a fight, but they'll go down so smooth.

Ingredients
- 4 oz Red Curry Paste
- 1 tspn Ginger Paste
- 1 tspn Lemon Grass Paste
- 1 can Coconut Milk 13.5 oz
- 1 cup White Wine
- 2 lb Black Mussels Washed and debearded

In a mixing bowl, whisk together the red curry paste, ginger paste, lemon grass paste, coconut milk, and white wine.

On a large baking tray, spread the black mussels out evenly and pour the red curry mix over the mussels. Bake at 400 degrees Fahrenheit for 10 minutes.

Place the mussels inside a serving bowl and garnish with cilantro, sliced red peppers and lime wedges and pour the red curry over the mussels. Serve with toasted baguette.
