Mango and avaocado rolls

Ingredients

  • 12 spring roll wrappers
  • one ripe mango thinly sliced
  • one ripe avocado thinly sliced
  • 1 cup shredded lettuce
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
  • Sweet chili dipping sauce for serving

Instructions

  1. Fill a shallow dish with warm water. Dip one spring roll wrapper into the water for a few seconds until softened.
  2. Place the softened wrapper on a clean work surface.
  3. Arrange a few slices of mango and avocado in the center of the wrapper.
  4. Top with shredded lettuce, fresh mint leaves, cilantro, and chopped peanuts.
  5. Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly to seal.
  6. Repeat with the remaining wrappers and filling.
  7. Serve the fresh mango and avocado spring rolls with sweet chili dipping sauce on the side for a delightful combination of flavors.
