Spring rolls

Ingredients

  • 12 spring roll wrappers
  • 1 cup kimchi drained and chopped
  • 1 cup cooked vermicelli noodles
  • 1/2 cup shredded carrots
  • 1/4 cup sliced scallions
  • one tablespoon sriracha sauce adjust to taste
  • one tablespoon soy sauce
  • one teaspoon sesame oil
  • Sesame seeds for garnish
  • Chopped cilantro for garnish

Instructions

  1. In a large bowl, combine the chopped kimchi, cooked vermicelli noodles, shredded carrots, sliced scallions, sriracha sauce, soy sauce, and sesame oil. Mix well to combine.
  2. Fill a shallow dish with warm water. Dip one spring roll wrapper into the water for a few seconds until softened.
  3. Place the softened wrapper on a clean work surface.
  4. Spoon about 2-3 tablespoons of the kimchi mixture onto the bottom third of the wrapper.
  5. Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly to seal.
  6. Repeat with the remaining wrappers and filling.
  7. Serve the spicy kimchi spring rolls garnished with sesame seeds and chopped cilantro, along with a sesame ginger dipping sauce for an extra burst of flavor.
