Lamb chops

Ingredients

  • 4 lamb chops about 1 inch thick
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 1 tablespoon fresh parsley finely chopped
  • 1/4 cup red wine or beef broth optional
  • 2 tablespoons butter optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the lamb chops by patting them dry with paper towels. This helps them to sear properly.
  3. Season the lamb chops generously with salt and pepper on both sides.
  4. Heat olive oil in a large, oven-safe skillet over medium-high heat. Add the lamb chops to the skillet and sear them for about 2-3 minutes on each side until they are golden brown.
  5. Once the lamb chops are seared, add the minced garlic, rosemary, thyme, and parsley to the skillet. Toss them with the lamb chops to coat them evenly with the herbs and garlic.
  6. If you want to deglaze the pan and create a sauce, pour in the red wine or beef broth and scrape up any browned bits from the bottom of the skillet. Let the liquid reduce by half.
  7. (Optional) Once the liquid has reduced, add butter to the skillet and let it melt, stirring it into the sauce.
  8. Transfer the skillet to the preheated oven and bake the lamb chops for about 8-10 minutes, depending on how well-done you prefer them.
  9. Remove the skillet from the oven and let the lamb chops rest for a few minutes before serving.
  10. Serve the lamb chops hot, garnished with fresh herbs if desired, and enjoy!
