Ginger Glazed Carrots

It's all in the sauce.

Ingredients

  • 1/2 lb carrots
  • 1 cup carrot juice
  • 1 3 inch piece ginger
  • kosher salt
  • pepper

Instructions

  1. Peel carrots and remove the green tops.
  2. In a skillet, heat carrot juice, ginger, salt, and pepper.
  3. Add carrots, cover and simmer for 7-10 minutes.
  4. When carrots are tender, stir in 2 tablespoons butter.
  5. Cook 3-5 more minutes.
  6. Serve. Enjoy! :D
