Phyllo-Wrapped Asparagus with Prosciutto

Ingredients

  • 3 oz thinly sliced prosciutto
  • 30 asparagus spears trimmed
  • 10 sheets frozen phyllo dough
  • cooking spray

Instructions

  1. Preheat oven to 450°.

  2. Wrap 1 prosciutto strip around each asparagus spear in a spiral pattern, kinda like a barber pole.

  3. Place 1 phyllo sheet on a work surface and coat it with cooking spray. Cut crosswise into thirds to get 3 phyllo rectangles.

  4. Arrange 1 asparagus spear across 1 of the short ends of each rectangle and roll up like a jelly roll.

  5. Arrange the rolls on a baking sheet and coat them with cooking spray.

  6. Repeat procedure with remaining phyllo, asparagus, and cooking spray. When they're rolled and ready, bake 'em at 450° for 10 minutes or until phyllo is golden and crisp.

  7. Serve warm or at room temperature.
