Eggs Benedict or pancakes? Eh, let's just have both.
In a mixing bowl, combine the flour and baking powder and mix well. Then add the eggs, milk and melted butter. Whisk until smooth. Add pepper and salt to taste and chives. Mix.
Generously grease a skillet with butter on medium heat to make pancakes, cooked until golden brown on both sides.
Place a pancake on a plate and top with cooked ham, spinach, hollandaise sauce in three layers. Top the final layer with a lightly poached egg. Enjoy.
