Grilled Pork and Peach Tacos

Ingredients

  • 1/4 cup Honey
  • 1/4 cup Chipotle Pepper in Adobo
  • 2 Garlic Cloves
  • 1/2 cup Oil
  • 1 tspn Chili Powder
  • 1 tspn Cumin Powder
  • 1 tspn Black Pepper
  • 1 tspn Salt
  • 1 lb Pork Tenderloin
  • 4 Peaches Halved and pitted

Instructions

  1. In a food processor or a blender, combine the honey, chipotle pepper, garlic cloves, oil, chili powder, cumin powder, black pepper, and salt until smooth. Pour into a large ziplock bag.

  2. Place a pork tenderloin inside the ziplock bag. Close the bag and try to let out as much air as possible so the tenderloin can marinate completely covered in the fridge for 2 to 24 hours.

  3. Drizzle some oil over the flesh side of the peaches and brush so the entire exposed flesh has been coated.

  4. Preheat the grill to medium-high heat and grill the tenderloin for 30 to 35 minutes. Grill the peaches flesh-side down for 2 to 3 minutes.

  5. Slice the tenderloin and chop up the peaches. Place inside tortilla with your favorite taco toppings. Enjoy.
