The classic pot-luck staple. Lightly tart and savory.
Combine the potatoes and water into a pot. Enough water to cover the potatoes. Add in 1 tspn of salt and bring water to a boil and reduce heat to medium-high for 15 minutes to cook the potatoes.
In a mixing bowl, combine the mayo, mustard, apple cider vinegar, 1/4 tspn of salt and the pepper and mix well.
Add in the relish, celery, onion, and eggs and stir. Mix in the potatoes and serve.
