A great snack on-the-go. Pizza pockets made at home.
Preheat your oven to 450ºF.
In a large bowl, combine the water, sugar, and yeast and let sit for 5 minutes.
Add the flour, salt, and 1 tablespoon of olive oil and stir until combined well.
Knead for 3-5 minutes on a lightly floured surface.
Lightly coat a large bowl with remaining olive oil and place the dough into the bowl and cover. Set to rise in a warm place for 20 minutes.
Stretch the risen dough into a rectangle on a lightly floured surface.
Layer the marinara, mozzarella, and pepperoni in the center of the rectangle.
Slice the dough in half through the center, lengthwise.
Fold the center edge towards the outer edge and and seal, creating a long roll-up.
Slice each roll into 4-5 equal pieces. Pinch the edges closed on all the pieces and place on baking sheet tray.
Brush the top of the pizza pockets with olive oil and sprinkle with cheese.
Bake for 15-20 minutes, or until lightly golden brown.
Serve immediately or let cool completely, then freeze in an airtight container up to 1-2 months.
