Bruschetta topped chicken breasts glazed over with a balsamic vinegar reduction.

Ingredients

  • 4 chicken breasts

Chicken Marinade

  • 2 tspn garlic
  • 1 tspn salt
  • 1/2 tspn pepper
  • 3 tspn Italian seasoning
  • 2 tspn olive oil

Bruschetta

  • 3 medium tomatoes diced
  • 1/4 red onion chopped
  • 1 clove garlic grated
  • salt to taste
  • 2 tbsp olive oil
  • 4 tbsp fresh basil

Balsamic Glaze

  • 1/2 cup balsamic vinegar
  • 55 g shredded Parmesan cheese for topping

Instructions

  1. Combine the ingredients for the marinade and marinate the chicken. Set aside.

  2. In a separate bowl, combine the ingredients for the bruschetta and salt to taste.

  3. Pour the balsamic vinegar in a small saucepan over high heat and bring to a boil. Reduce the heat to simmer the balsamic vinegar for 8-10 minutes, until it has thickened and formed a glaze.

  4. In a large skillet, cook the chicken over high heat. Once cooked through, top with the bruschetta mixture and drizzle the balsamic glaze over. Sprinkle with Parmesan cheese and serve.
