Bruschetta topped chicken breasts glazed over with a balsamic vinegar reduction.
Combine the ingredients for the marinade and marinate the chicken. Set aside.
In a separate bowl, combine the ingredients for the bruschetta and salt to taste.
Pour the balsamic vinegar in a small saucepan over high heat and bring to a boil. Reduce the heat to simmer the balsamic vinegar for 8-10 minutes, until it has thickened and formed a glaze.
In a large skillet, cook the chicken over high heat. Once cooked through, top with the bruschetta mixture and drizzle the balsamic glaze over. Sprinkle with Parmesan cheese and serve.
