A tasty pasta and beef casserole made in one pot.
Heat a pot over medium-high heat.
Add and heat 1 tbsp oil to the pot.
Add the diced onion, garlic, chopped red bell pepper and carrots. Stir and cook for about 3 minutes.
Add the ground beef and break up. Cook until the beef is no longer pink. Season with salt, pepper and the Italian seasoning.
Add the beef stock and milk. Add the noodles.
Place lid on and cook for about 15 minutes, making sure to stir occasionally.
Add 1 cup Italian cheese and the jar of pasta sauce. Stir and then cover and cook for another 3 minutes.
Add the pesto and the rest of the cheese. Stir and serve.
