Delicate chocolate truffles stuffed with the cookies and cream flavor you love.
Throw 9 cookies into a food processor and crush them into fine crumbs. If you don't have a food processor, just put 'em in a sealed bag and crush them with a rolling pin. Set this first batch of crumbs aside. Crush all of the remaining cookies in the same was, and place them in a bowl. Add in the cream cheese and mix until well blended. Roll that mixture up into balls, each about 1-inch in diameter, until you've used it all up.
Dip the balls in the melted chocolate, then place them on a wax paper-covered baking sheet. Sprinkle the balls with the reserved cookie crumbs.
Put the balls in the fridge until they get nice and firm, about 1 hour. If you have any leftovers, you can store them in the fridge with a cover.
