Chewy and peanut buttery, and no flour required!
Turn the oven up to 350 F.
Using an electric mixer, beat the peanut butter, white sugar, and brown sugar together in a big bowl until smooth. Stir in the egg, vanilla extract, and baking soda, followed by the chocolate chips if you're using them.
Drop small rounded spoonfuls of the mixture onto a baking sheet, spaced about 2 inches apart.
Bake the sheet in the preheated oven for 8 minutes, or until cookies are flattened and golden.
