Throw a spud in the microwave for a buttery-smooth treat.
Clean the potato, then poke it a few times with a fork. Place it on a plate.
Cook the potato on full power in the microwave for 5 minutes. Turn it over, and hit it for 5 more minutes. When the potato is soft, take it out of the microwave and cut in half lengthwise. Season it to taste with salt and pepper, then mash up the inside with a fork. Top each open side with butter and 2 tablespoons of cheese. Put the halves back in the microwave, and cook for about 1 minute to melt the cheese.
Top the finished spud with the remaining cheese and sour cream, and serve.
