Lemon Couscous

A light and refreshing substitute for rice!

Ingredients

  • 1 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon butter
  • ¼ teaspoon salt
  • cup couscous
  • 1 2 ounce jar sliced pimento peppers drained
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Stir the broth, lemon juice, lemon zest, butter, and salt together in a big saucepan and get the whole thing boiling. Add the couscous to the liquid and stir it around to get an even coat. Put a cover on the pan and remove it from heat. Let the couscous soak in the liquid until the moisture is mostly absorbed, about 5 minutes.

  2. Use a fork to fluff the couscous a bit, then stir in pimento peppers, pine nuts, and parsley.
