Rumchata Hot Cocoa

The hot cocoa season has officially started, so surprise yourself with this sweet gift. This heavenly (and boozy) recipe is perfect for the holiday season.

Ingredients

  • 2 1/2 cups whole milk
  • 1/4 cup granulated sugar
  • 2 tbsp cocoa powder
  • 1 tsp pure vanilla extract
  • 6 oz chocolate chips or chopped bittersweet chocolate
  • 1/2 cup Rumchata
  • 1/3 cup warm caramel
  • whipped cream for serving
  • cinnamon sugar for serving
  • cinnamon stick for serving

Instructions

  1. Bring the milk to a simmer in a small saucepan on medium heat. Whisk in the sugar and cocoa powder and stir until the lumps go away. Stir in the chocolate chips and vanilla and cook, giving an occasional stir, until the chocolate has completely melted. Stir in the Rumchata, then kill the heat.

  2. Pour the caramel into a small dish. Dip the cups in the caramel to get a nice, coated rim. Pour the hot chocolate into each glass, then top with whipped cream, a sprinkle of cinnamon sugar, some extra caramel, and a cinnamon stick.
