Sweet potatoes topped with chicken, sour cream, and bacon.
Add 1 cup of water into your Instant Pot and place the trivet on the bottom. Arrange the sweet potatoes on top of the trivet and close lid.
Pressure Cook on high for 18 minutes. Release the pressure naturally for 15 minutes.
Transfer the sweet potatoes to individual plates and slice each sweet potato in half. Season with salt and pepper and top with desired amount of sour cream, chicken, bacon, and chives before serving.
