Shrimp Ramen

Turn that cheap packaged ramen into something a little more filling!

Ingredients

  • 8 ounces bacon chopped
  • 5 garlic cloves thinly sliced
  • 2 cups sliced stemmed shiitake mushrooms about 6 ounces
  • 7 cups chicken broth
  • 1 teaspoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 2 3-ounce packages ramen noodles, flavor packets discarded
  • 12 ounces peeled and deveined medium shrimp halved lengthwise (about 20 shrimp)
  • 2 tablespoons 1-inch-long pieces chives

Instructions

  1. Start by placing the bacon in an unheated medium saucepan. Cook that stuff on medium-high heat while giving an occasional stir until they turn golden, about 6 minutes. Pour out all but 3 tablespoons of the fat from the pan. Stir the garlic in and cook until that's golden as well, about 3 minutes. Stir the shiitake in and cook for another 6 minutes. They should be well browned.

  2. Stir the chicken broth, soy sauce, and Worcestershire into the mix and bring the whole thing to a boil. Stir in the noodles and continue to boil until they're nice and tender, about 2 minutes.

  3. Finally, take the broth off the heat and stir in the shrimp. Don't worry, the ambient heat from the broth will cook the shrimp. Let the whole thing stand until the shrimp are fully cooked, about 1 to 2 minutes. Serve in a bowl topped with chives (and a Sapporo beer probably wouldn't hurt either).
