Give a couple of cookie sheets a light greasing. Stick a craft stick into each of your apples. They should still be whole and have their stems.
In a medium saucepan on medium-high heat, combine the sugar, corn syrup and water. Get that mix between 300 to 310 degrees F. If you drop a small amount of syrup into some cold water and it forms hard, brittle threads, you're good to go. Take the mix off the heat and stir in the food coloring.
While holding an apple by its stick, dip it in the syrup, then take it out and turn it around so it coats evenly. Place each apple on the prepared sheets and leave them until they've hardened.
