In a small bowl, pour the hot water, then dissolve the gelatin in it. Pour the gelatin mix, along with the coffee and sugar, into a saucepan and get it boiling over high heat. Pour the jelly mix into glasses for individual servings or a large pan if you want to turn it into little cubes. Let the jelly chill in the fridge until it has solidified, 6 to 7 hours.
