Cucumber and Cream Cheese Mini Sandwiches

Ingredients

  • 1 large cucumber
  • 8 ounces softened cream cheese
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste
  • 1 package mini bread slices such as cocktail bread or party rye
  • Fresh dill sprigs for garnish (optional)

Instructions

  1. Wash the cucumber and slice it thinly, discarding the ends. Place the cucumber slices on paper towels to absorb excess moisture.
  2. In a medium mixing bowl, combine the softened cream cheese, chopped dill, salt, and pepper. Mix until smooth and well combined.
  3. Spread a thin layer of the cream cheese mixture onto each bread slice.
  4. Place a cucumber slice on top of each cream cheese-covered bread slice.
  5. Top with another bread slice to form a mini sandwich.
  6. Repeat until all the bread slices are used up.
  7. Arrange the mini sandwiches on a platter, and garnish with fresh dill sprigs, if desired.
  8. Serve immediately, or cover and refrigerate until ready to serve.
