Cucumber and Cream Cheese Mini Sandwiches

- 1 large cucumber
- 8 ounces softened cream cheese
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste
- 1 package mini bread slices such as cocktail bread or party rye
- Fresh dill sprigs for garnish (optional)
Wash the cucumber and slice it thinly, discarding the ends. Place the cucumber slices on paper towels to absorb excess moisture.
In a medium mixing bowl, combine the softened cream cheese, chopped dill, salt, and pepper. Mix until smooth and well combined.
Spread a thin layer of the cream cheese mixture onto each bread slice.
Place a cucumber slice on top of each cream cheese-covered bread slice.
Top with another bread slice to form a mini sandwich.
Repeat until all the bread slices are used up.
Arrange the mini sandwiches on a platter, and garnish with fresh dill sprigs, if desired.
Serve immediately, or cover and refrigerate until ready to serve.
