Ingredients

  • 1 bag of tortilla chips
  • 1 pound ground beef or turkey
  • 1 can of black beans drained and rinsed
  • 1 diced small red onion
  • 1 diced small red bell pepper
  • diced 1 jalapeño pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese
  • 1 diced avocado
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • 1 lime cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it into small pieces as it cooks. Drain off any excess fat.
  3. Add the black beans, red onion, red bell pepper, and jalapeño pepper to the skillet with the cooked meat. Stir well to combine.
  4. Spread a layer of tortilla chips in the bottom of a large oven-safe dish. Spoon the meat mixture over the chips. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
  5. Bake the nachos in the oven for 10-15 minutes or until the cheese is melted and bubbly.
  6. Remove the nachos from the oven and top with diced avocado, chopped cilantro, and a dollop of sour cream. Season with salt and pepper to taste.
  7. Serve the loaded nachos hot, with lime wedges on the side for squeezing over the top.
