Ingredients
- 1 bag of tortilla chips
- 1 pound ground beef or turkey
- 1 can of black beans drained and rinsed
- 1 diced small red onion
- 1 diced small red bell pepper
- diced 1 jalapeño pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey jack cheese
- 1 diced avocado
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
- 1 lime cut into wedges
- Salt and pepper to taste
Instructions
-
Preheat your oven to 350°F.
-
In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it into small pieces as it cooks. Drain off any excess fat.
-
Add the black beans, red onion, red bell pepper, and jalapeño pepper to the skillet with the cooked meat. Stir well to combine.
-
Spread a layer of tortilla chips in the bottom of a large oven-safe dish. Spoon the meat mixture over the chips. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
-
Bake the nachos in the oven for 10-15 minutes or until the cheese is melted and bubbly.
-
Remove the nachos from the oven and top with diced avocado, chopped cilantro, and a dollop of sour cream. Season with salt and pepper to taste.
-
Serve the loaded nachos hot, with lime wedges on the side for squeezing over the top.
