Fresh Strawberry Shortcake

Ingredients

  • 1 pound fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 2/3 cup milk
  • Whipped cream for topping

Instructions

  1. In a mixing bowl, combine sliced strawberries with sugar. Let them macerate for 20 minutes to release their juices.
  2. Whisk together flour, sugar, baking powder, and salt in a separate bowl. Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  3. Gradually add milk and stir until the dough comes together. Avoid overmixing.
  4. On a floured surface, roll the dough to a 1-inch thickness and cut it into round shapes using a biscuit cutter.
  5. Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden brown.
  6. Allow the biscuits to cool. Split each biscuit in half, spoon some macerated strawberries onto the bottom half, top with whipped cream, and cover with the other half. Serve and enjoy!
