Ingredients

  • 1 pound fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 2/3 cup milk
  • Whipped cream for topping

Instructions

  1. In a mixing bowl, combine sliced strawberries with sugar. Let them macerate for 20 minutes to release their juices.
  2. Whisk together flour, sugar, baking powder, and salt in a separate bowl. Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  3. Gradually add milk and stir until the dough comes together. Avoid overmixing.
  4. On a floured surface, roll the dough to a 1-inch thickness and cut it into round shapes using a biscuit cutter.
  5. Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 12-15 minutes until golden brown.
  6. Allow the biscuits to cool. Split each biscuit in half, spoon some macerated strawberries onto the bottom half, top with whipped cream, and cover with the other half. Serve and enjoy!

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 ounces of softened cream cheese
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh diced strawberries
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 325°F (165°C). Line a baking dish with parchment paper.
  2. Mix graham cracker crumbs and melted butter in a bowl until well combined. Press the mixture evenly into the bottom of the prepared baking dish.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust in the baking dish. Spread diced strawberries evenly on top.
  5. Warm the strawberry jam slightly in the microwave and drizzle it over the strawberry layer.
  6. Bake for 30-35 minutes until the edges are set and the center slightly jiggly. Remove from the oven and let it cool completely.
  7. Refrigerate for a few hours or overnight before cutting into bars. Serve chilled, and enjoy the creamy and fruity goodness!
