It's tough to get picky eaters to eat salads. I should know; I didn't start eating them until a couple of years ago. I find a healthy serving of meat and a satisfying crunch can get even the pickiest to pick up a salad fork. It doesn't get much crunchier than Chicken Peanut Chopped Salad!
Toss the chopped chicken tenders, coleslaw mix, cabbage, scallions, cilantro, and 1/2 cup of the chopped peanuts together in a large bowl. Boom, it's a salad.
Now, the dressing. Whisk together the lime juice and peanut butter in a small bowl until smooth. Slowly whisk in the sesame oil, soy sauce, vinegar, light brown sugar, and crushed red pepper, whisking until it becomes a creamy dressing.
Pour dressing over salad mixture and toss to get a good, even coating on the ingredients. Sprinkle with remaining 1/4 cup peanuts. Crunchy, savory, and with just enough meat to be the main course.
