You don't have to turn your oven on to enjoy a slice of one of your favorite desserts.
In a big bowl, mix together graham cracker crumbs, butter, sugar, and salt. Press the mixture into the bottom of an 8" springform pan and up the sides.
In a separate large bowl (or in the bowl of a stand mixer), beat heavy cream with a hand mixer until stiff peaks form, about 5 minutes.
In yet another large bowl, beat cream cheese and sour cream until smooth, then add powdered sugar, vanilla, lemon juice, and salt. Fold the whipped cream into the cream cheese mixture, then pour the resulting mixture over the crust and smooth off the top with an offset spatula.
Cover and refrigerate for at least 4 hours.
