Greek Spinach Dip

Enjoy this incredibly tasty and creamy (not to mention healthy) dip at your next get-together.

Ingredients

  • 2 tbsp olive oil
  • 1/4 cup roughly chopped shallots
  • 4 green onions chopped
  • 1 tbsp minced garlic
  • 12 oz spinach leaves
  • 1/2 tsp salt
  • 1/2 tsp fresh lemon zest
  • 2 tsp fresh lemon juice
  • 1 cup Greek yogurt
  • 1/2 cup finely crumbled feta cheese
  • 2 tbsp chopped fresh dill
  • freshly ground black pepper

Instructions

  1. Heat the oil in a big frying pan on high heat. Add shallots, onions, and garlic and cook while stirring often until everything becomes fragrant, about 1 minute. Add the spinach and continue cooking and stirring until it's wilted, about 2 minutes.

  2. Scoop the spinach into a food processor with a slotted spoon. Pulse until roughly puréed, should take about 5 pulses. Add the remaining ingredients (except for the pepper), and give it one more pulse just to combine, then season to taste with pepper.
