Combine everything but the crab meat and cheddar in a bowl and stir until blended. Fold in the crab meat.
Spoon the mixture into an 11- x 7-inch baking dish and sprinkle it evenly with Cheddar.
Bake the dish at 350° for 35 minutes or until it becomes bubbly. Garnish with parsley if you like. Serve immediately with crackers or toasted French bread rounds.
