Spicy Tomato Shrimp Pasta
A literal one-pot wonder.

olive oil

large shrimp
peeled, deveined, divided

angel hair pasta
broken into 3-inch pieces

medium red onion
chopped

tablespoons
fish sauce

sambal oelek

canned whole peeled tomatoes
plus purée

cup
parsley
chopped

Kosher salt
freshly ground pepper

Lime wedges
for serving

Heat olive oil in a large pot over medium heat.

Sautee shrimp for 1-2 minutes per side or until pink.

Remove from pan. Break pasta into olive oil and cook for 2-3 minutes. They should be browned and smelling nutty.

Add the red onion to the pot and continue to cook. Mix in the sambal and the fish sauce, cooking for 2 minutes.

Next, pour in the canned tomatoes and 3 cups of water. Bring to a boil then reduce to simmer.

Cook pasta dish for 10 minutes. Now add parsley and season.

Mix in shrimp, serve and enjoy! :D
