2-3boneless skinless chicken breastsdiced into bite sized pieces
short-cut pasta 16 oz
jar of your favorite marinara sauce 24 oz
Water to fill empty marinara sauce jar
1cupmozzarella cheese
1/2cupparmesan cheese
1medium yellow onionminced
3clovesgarlicminced
Salt and pepperto taste
1tspItalian seasoning
1/2tspgarlic powder
Additional dried Italian seasoningoptional
Fresh parsley and/or basilminced for garnish
Instructions
Pour oil into a heavy-bottomed pot and heat over medium-high heat. Add chicken and sautee for 5 minutes or until it's mostly cooked through. Season with garlic powder and Italian seasoning. Remove chicken and set aside.
Add onion and garlic to the pot and cook for 3 minutes, or until translucent.
Pour in the marinara along with enough water to fill the jar to the pot. Bring everything to a boil then reduce heat.
Stir in chicken and pasta then cover and cook for 10-15 minutes. Add Parmesan and 1/4 the mozzarella.
Top the pot with the rest of the mozzarella and cook for 3-5 more minutes so that the cheese can melt.
