Chicken Salad

Cool, colorful and fresh chicken salad brimming with veggies.

Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup plain fat-free Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 4 cups cooked chicken chopped
  • 1/2 cup green onions chopped
  • 1 cup celery diced
  • 1 cup red seedless grape halved
  • 1 tbsp fresh dill chopped
  • 1 tbps fresh flat-leaf parsley chopped
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/2 cup roughly chopped almonds toasted

Instructions

  1. Whisk together the mayonnaise, yogurt, mustard and lemon juice in a big bowl. Stir everything else in until it's well blended. Serve with your favorite crackers or, if you prefer, on whole grain bread with lettuce and tomato. A CSLT!
