Cook the carrots and 1/2 cup water in a large nonstick skillet on high heat for 3 to 5 minutes while stirring occasionally. You're ready for action when the carrots are softened and the water is evaporated. Remove everything from the skillet.

Turn up the heat to medium-high, and cook, stirring constantly for 4 minutes. Add green onions and keep cooking and stirring for 1 minute. Spoon mixture evenly onto fresh lettuce leaves and roll up. Serve with hoisin sauce, if desired.
