Curry Fried Chicken Salad

Got some leftover fried chicken? Turn it into this tasty sandwich filling!

Ingredients

  • 3 cups fried chicken breast chopped
  • 1 cup pecan halves lightly toasted and coarsely chopped
  • 1 cup Granny Smith apple diced
  • 3/4 cup celery finely chopped
  • 2 cups mayonaisse
  • 2 tbsp fresh lemon juice
  • 1 tbsp curry powder
  • 1 1/2 tsp sugar
  • freshly ground black pepper for tasting

Instructions

  1. Mix the chicken, pecans, diced apple, and celery together in a big bowl, and toss it all to combine. Stir in the mayonnaise, then the lemon juice, curry, sugar, and black pepper to your preference.
