First, process the unsliced bologna through a spiralizer fitted with the large triangle-shaped hole attachment to create bologna “noodles.”
Melt the butter in a big nonstick skillet on medium-high heat. Add the bologna noodles and cook until they're browned and slightly crispy, occasionally turning them over. Transfer them to a plate lined with paper towels to drain.
Spread the mayo evenly on 3 of the bread slices. Top each with 1 cheese slice. Top evenly with the fried bologna, chips, and lettuce. Spread mustard on remaining 3 bread slices and place on top of sandwiches.
